12 oz Eckrich® Skinless Turkey Smoked Sausage, biased cut in ¼ inch pieces 1/2 cup Onion, Diced 2 Cups Cherry Tomatoes, Sliced in Half 1 Yellow Squash, Cut in ¼-Inch Pieces 2 Zucchini, Cut in ¼-Inch Pieces 2 Garlic Cloves, Minced 1 Tbsp Olive Oil 1/2 Tsp Red Pepper Flakes 1 Tsp Dried Oregano

Directions
1HEAT a 12-inch skillet over medium heat
2MELT olive oil in skillet and add diced onion. Cook until onions are soft, about 3–4 minutes.
3STIR in garlic and cook for 30 seconds.
4ADD smoked sausage and cook until browned, about 7 minutes.
5STIR in veggies and seasoning, then cook for another 7 minutes until zucchini is tender with a bit of a crunch.
