MICROWAVE potatoes on a microwave-safe plate on high power for 2 minutes. Flip and microwave for another 2–3 minutes longer. Repeat until tender, then cut into quarters.
HEAT 1 Tbsp of the oil in a large pot on medium. Then add in the shallot. Stir for 1–2 minutes before adding the remaining oil, purple onion, and carrots. Stir occasionally for 3–4 minutes.
SET ASIDE everything in the pot to add in the smoked sausage, and cook for another 2–4 minutes.
COOK until all the oil is fully absorbed, veggies are crisp, and the smoked sausage is heated through.
SEASON to taste with salt & pepper and serve with freshly chopped rosemary.
