1 Tbsp. vegetable oil
 
8 oz. package spanish-style yellow rice mix
 
2 - 1/4 cup(s) water
 
1 cup(s) green peas
 
2 roasted red peppers (from a jar), chopped ( 1/3 cup)
 
1/2 cup(s) sliced stuffed green olives
 
2 green onions, sliced
 
1/4 - 1/2 Tsp. crushed red pepper flakes

Directions
1Cut sausage into ¾" thick slices.
2Heat oil in a 4-quart pan over medium heat.
3Cook sausage until browned, about 8 minutes.
4Stir in rice mix and water.
5Cover pan, bring to a boil. Reduce heat to a simmer; cook 20 minutes or until water is almost absorbed.
6Stir in peas, roasted red peppers, olives, onions and pepper flakes.
7Cover and cook until rice is tender, about 5 more minutes.
