BOIL water, and cook noodles according to package.
ADD butter to a skillet, and melt on low. Add onions and brown for a couple of minutes.
ADD nutmeg, salt, and brown sugar, and let onions caramelize in the butter.
SLICE smoked sausage into 1-inch slices, then quarter the slices.
ADD smoked sausage and peas when the onions are a deep brown color; brown until the ingredients are slightly crispy.
ADD drained cooked noodles to the skillet, then toss around until coated in the butter and onions. Finish with a sprinkle of black pepper and dried parsley.
